Audrey Sauders, owner of New York’s Pegu Club created this cocktail during the recent cocktail renaissance. Aged rum and Angostura Bitters create a more mature and nuanced “grown-up mojito”.


  • 10-12 mint leaves
  • 1.5 oz Anejo Rum
  • 1 oz simple syrup
  • 0.75 oz lime juice
  • Topper of sparkling wine
  • Garnish: Mint sprig
  • Prep: Shake without sparkling, strain and top with sparkling wine and garnish.
